Once upon a time, the Tabatà were Ginevra’s ancestors, in love with their land situated on the splendid Ionian coast of Calabria, at the heart of the Mediterranean.

Ginevra chose to name the company after her ancestors and decided to steer it towards fully organic and sustainable farming.

The challenge she wants to overcome is to create an outstanding EVO oil that exudes the scents and aromas of this land, rich in nature and history, rough and a little wild, but always welcoming and generous.

3 FONDI, OLTRE 2500 PIANTE

The Tabatà olive groves are divided into three estates, all located between the Sila and the sea. In the Prato estate, there are 1,800 trees, including cultivars such as Dolce di Rossano, Biancolilla, Tondina, Leccino, Ogliarola Messinese and Carolea.

The Angiolino estate contains around 600 centuries-old trees, divided between Dolce di Rossano, Tondina and Biancolilla. In the Puzzilli estate, there are 110 Dolce di Rossano plants which are more than 120 years old. The SlowFood Presidium monovarietal oil is produced with these.

UN PERCORSO INIZIATO NEL 2010

All three Tabatà estates are organic cultivations with a certification process that began over 10 years ago. The trees are cared for with organically approved products, and the agricultural focus is always on preventing the problem and not on scheduled interventions to combat plant diseases.

The olive trees are fed with organic fertilisers, both at the base and with foliar nutrient treatments, taking great care to create an environment that protects the trees whilst also being optimal for their vegetative balance.

RACCOLTA E FRANGITURA

DOVE NASCE LA QUALITÀ

For maximum quality, harvesting takes place before maturation and ripening, and is done by hand with mechanical aids. The olives are placed in crates and taken to the oil mill, where they are processed within a couple of hours of being picked.

The mill is equipped with a chiller for cooling the paste and in-line filtration, and operates in a two-stage continuous cycle. Each batch is processed with customised criteria that follow the latest research in the field, specific to each cultivar.

L’OLIO TABATÀ

FIUMARE
Sono i corsi d’acqua che scendono dalla Sila. Normalmente sono docili e tranquilli, ma quando piove o c'è il disgelo si trasformano in acque tumultuose e travolgenti, scavando profondi canyon, stretti e rocciosi.

BORÈA
Nella mitologia greca era il Vento del Nord. Nella Calabria jonica ha un doppio significato: è il vento di settentrione che rinfresca gli oliveti ed è il ricordo di un’antica città greca che sorgeva in queste terre.

MURAGLIE
Sono i muri a secco che in Calabria ricoprono tutti i pendii coltivati ad olivo. Nella tenuta Tabatà è in corso un lento e accurato lavoro di ripristino di questi antichi manufatti, la cui origine si perde nella notte dei tempi.

ELICRISO
L’Helichrysum italicum cresce spontaneo in mezzo agli olivi di Tabatà, diffondendo un profumo che ricorda la liquirizia. Bellissima l’etimologia: helios (sole) e chrysos (oro), il colore dell’olio.

SILA GRECA
La tenuta Tabatà si trova nella cosiddetta “Sila Greca”, che è la parte più a oriente dell’altopiano della Sila. Si chiama così perché qui, nel corso del tempo, si sono insediate molte comunità di greci, bizantini ed albanesi.

MARE IONIO
È il bellissimo mare blu su cui si affacciano gli oliveti Tabatà. Separa l’Italia meridionale dalla Grecia e sulle sue coste sorsero nell’antichità le fiorenti colonie che costituivano la Magna Grecia.
