Once upon a time, the Tabatà were Ginevra’s ancestors, in love with their land situated on the splendid Ionian coast of Calabria, at the heart of the Mediterranean.

Young, skilled, and blessed with a practical outlook, Ginevra wanted to return to her Calabrian roots in the area of Calopezzati, to revive a tradition that runs through her childhood memories in the land of her grandparents.

Sun, wind, fragrances, colours, flavours: with these sensations close to her heart, Ginevra set out on a journey to the very roots of her family history, bringing a legacy of knowledge and values back to life.

Ginevra has started an innovative family business together with her mother, uncle Roberto and grandparents.

FROM CALABRIA

Ginevra chose to name the company after her ancestors and decided to steer it towards fully organic and sustainable farming.

The challenge she wants to overcome is to create an outstanding EVO oil that exudes the scents and aromas of this land, rich in nature and history, rough and a little wild, but always welcoming and generous.

The olive groves

3 ESTATES, MORE THAN 2500 TREES

The Tabatà olive groves are divided into three estates, all located between the Sila and the sea. In the Prato estate, there are 1,800 trees, including cultivars such as Dolce di Rossano, Biancolilla, Tondina, Leccino, Ogliarola Messinese and Carolea.

The Angiolino estate contains around 600 centuries-old trees, divided between Dolce di Rossano, Tondina and Biancolilla. In the Puzzilli estate, there are 110 Dolce di Rossano plants which are more than 120 years old. The SlowFood Presidium monovarietal oil is produced with these.

Organic cultivation

A JOURNEY THAT BEGAN IN 2010

All three Tabatà estates are organic cultivations with a certification process that began over 10 years ago. The trees are cared for with organically approved products, and the agricultural focus is always on preventing the problem and not on scheduled interventions to combat plant diseases.

The olive trees are fed with organic fertilisers, both at the base and with foliar nutrient treatments, taking great care to create an environment that protects the trees whilst also being optimal for their vegetative balance.

HARVESTING AND PRESSING

WHERE QUALITY BEGINS

For maximum quality, harvesting takes place before maturation and ripening, and is done by hand with mechanical aids. The olives are placed in crates and taken to the oil mill, where they are processed within a couple of hours of being picked.

The mill is equipped with a chiller for cooling the paste and in-line filtration, and operates in a two-stage continuous cycle. Each batch is processed with customised criteria that follow the latest research in the field, specific to each cultivar.

THE STORY OF TABATÀ OIL

TORRENTS
These are the waters that flow down from the Sila. Usually, they are gentle and calm, but when it rains, or there is a thaw, they transform into tumultuous and rushing waters, carving deep, narrow, rocky canyons.

BOREAS
In Greek mythology, he was the North Wind. In Ionian Calabria, it has a double meaning: the north wind that refreshes the olive groves and the memory of an ancient Greek city that once stood in these lands.

WALLS
These are the dry stone walls that cover all the olive-growing slopes in Calabria. In the Tabatà estates, slow and careful work is underway to restore these ancient artefacts, whose origins are lost in the mists of time.

HELiCHRYSUM
Helichrysum italicum grows wild among the Tabatà olive trees, giving off a scent reminiscent of liquorice. The etymology is beautiful: helios (sun) and chrysos (gold), the colour of oil.

SILA GRECA
The Tabatà estates are located in the so-called "Sila Greca", the easternmost part of the Sila plateau. Its name comes from the fact that many Greek, Byzantine and Albanian communities have settled here over time.

IONIAN SEA
The beautiful blue sea overlooked by the Tabatà olive groves. It separates southern Italy from Greece and, on its shores, the flourishing colonies that made up Magna Graecia emerged in ancient times.
